Finocchiona PGI takes center stage in the streets of Bivigliano, in the Florentine Apennines
The Finocchiona and Tuscan Salami Festival is one of the most cherished gastronomic events of spring in the Florentine Apennines. It takes place in Bivigliano, a picturesque village in the municipality of Vaglia, in the Province of Florence, nestled in the woods of Monte Senario at the gateway to the Mugello. The absolute star is Finocchiona PGI, the salami seasoned with fennel seeds that has told the story of Tuscany's rural identity for centuries and recently earned the prestigious Protected Geographical Indication status.
Throughout the day, food stalls offer the chance to buy and taste Finocchiona PGI alongside other traditional Tuscan salami. The event is supported by the Consortium for the Protection of Finocchiona PGI, which ensures the quality and authenticity of the products on offer. Alongside the tastings, the village streets host a craft market and local producers, providing an opportunity to discover the excellence of the Mugello territory.
The festival's folk soul shines through the performances of the Maggiaioli di Bivigliano, who bring the streets to life with their 'Maggio' songsโan ancient tradition of begging and welcoming the arrival of spring. In the afternoon, the evocative parade of the Filarmonica di Vaglia takes place, accompanied by flag-wavers, drummers, and the 'Madame Vagliesi' in period costumes. There is also a space dedicated to music in the '9Music' area, where visitors can try out instruments and watch performances by students.
The festival is designed with children in mind, featuring inflatable games, face painting, and creative workshops to keep them entertained. The event also offers the rare opportunity to visit the Villa di Bivigliano, which opens to the public for this special occasion. Admission to the event is completely free.
Organized by the Pro Loco Vaglia - Mugello with the patronage of the Municipality of Vaglia and the participation of local associations and merchants, the festival is an excellent opportunity to discover Bivigliano, a historic resort town surrounded by woods, and to immerse yourself in the flavors and traditions of the Mugelloโa land of salami, Romanesque churches, and Apennine landscapes just a few kilometers from Florence.
The 7th edition of the Finocchiona and Tuscan Salami Festival was held on Sunday, May 17, 2026, in Bivigliano, organized by the Pro Loco Vaglia - Mugello with the patronage of the Municipality of Vaglia and the support of the Consortium for the Protection of Finocchiona PGI and Banco Fiorentino.
The star was Finocchiona PGI, available for tasting and purchase throughout the day alongside traditional Tuscan salami, accompanied by a craft market and local producers.
Bivigliano is a village in the municipality of Vaglia (FI), accessible by car via the SP55 'dei Carbonai' road. From Florence, take the SS65 'della Futa' road towards Mugello (approximately 25 km). The nearest train station is Pratolino/Vaglia on the Florence-Borgo San Lorenzo line.
Free admission. The event runs throughout the day, roughly from 10:00 AM to 7:00 PM, along Piazza Don Castelli and Via Roma.
We recommend wearing comfortable clothing for walking between the stalls and taking advantage of the special opening of the Villa di Bivigliano. Parking is available in areas adjacent to the town center.
