Roast bull and spring festival on Monte di Buja since 1965
On Monte di Buja, in the province of Udine, a tradition has been renewed every spring since 1965: the Fieste di Primevere, now primarily known as the Sagra del Toro. Originally called "Sagre di primevere," the event has become an unmissable fixture on the Friulian calendar over the years, drawing visitors not only from Friuli but also from Veneto, Slovenia, and Austria.
The undisputed star is the spit-roasted bull, slowly cooked over wood embers using a technique passed down through generations. It's the centrepiece of a traditional Friulian menu featuring fresh polenta prepared on-site, bull ragù gnocchi, frico with polenta, bull carpaccio, and bull burgers with fries. Pro Buja ensures table service without long queues, thanks to decades of well-honed organisation.
The Fieste di Primevere are more than just food. Every evening, the stage hosts live music, while the programme includes shows, debates, historical-tourist visits, and games for all ages. It's a festival that blends delicious food with the joy of togetherness, all set against the scenic backdrop of Monte di Buja.
Organised by Pro Buja, which celebrated its sixtieth anniversary in 2025, the Sagra del Toro is more than just an event; it's a piece of Buja's community identity, an occasion that brings together generations of locals and loyal visitors every spring.
The 61st edition of the Fieste di Primevere - Sagra del Toro will be held on Monte di Buja on the two weekends of June 2026. Organised by Pro Buja, it features spit-roasted bull and the great classics of Friulian cuisine, accompanied by live music, culture, and entertainment for all ages.
The event is spread over two weekends: June 4-6 and June 12-14, 2026, on Monte di Buja.

Getting there: Buja (UD) is accessible from the A23 motorway (Gemona-Osoppo exit) and the regional road. The festival is held on Monte di Buja, in the Monte hamlet.
