On Monte di Buja, in the province of Udine, a tradition has been renewed every spring since 1965: the Fieste di Primevere, now primarily known as the Sagra del Toro. Originally called "Sagre di primevere," the event has become an unmissable fixture on the Friulian calendar over the years, drawing visitors not only from Friuli but also from Veneto, Slovenia, and Austria.

Spit-roasted bull, the signature dish

The undisputed star is the spit-roasted bull, slowly cooked over wood embers using a technique passed down through generations. It's the centrepiece of a traditional Friulian menu featuring fresh polenta prepared on-site, bull ragù gnocchi, frico with polenta, bull carpaccio, and bull burgers with fries.
