The festival that tells the story of Allumiere's peasant cuisine

Every summer, in the historic center of Allumiereโ€”a charming Renaissance village tucked away in the Tolfa Mountains near Romeโ€”the Festival of Ancient Flavors and Acquacotta transforms Piazza Agostino Chigi into a grand communal dining table. Organized by the historic Contrada Polveriera, the event is a genuine journey through traditional flavors passed down through generations, prepared with simple ingredients rich in history and passion.

Acquacotta, the queen of the table

The undisputed star is acquacotta, a symbolic dish of peasant and Maremma cuisine, once the staple food of charcoal burners and miners in Allumiere, now recognized as a premier Italian gastronomic delight. Alongside it, you will find other local traditions: mentucciata, gnocchi, and beghe, all strictly handmade by the Contrada's cooks, as well as tripe, sausages, Maremma-style stew, beans with pork rinds, snails, and game, all paired with excellent local wine. To complete the experience, visit La Fraschetta area to enjoy local cured meats, cheeses, and wines in a convivial atmosphere.

The festival is more than just food: every evening, the squares and covered areas of the village come alive with live music, street performers, and roaming shows that accompany your dinner. The town center also hosts craft stalls, local product stands, and plenty of activities designed to make the festival a perfect outing for the whole family.

Allumiere and its traditions

Located about 85 kilometers from Rome, inland from the coast of Civitavecchia, Allumiere owes its name to the ancient alum mines that once made it an important mining center for the Papal States. Today, the Festival of Ancient Flavors and Acquacotta is one of the most authentic and artisanal events in the Municipality of Allumiere, in the Lazio region, attracting visitors from across the Tuscia area and the province of Rome.

Acquacotta Festival โ€” edition 2026

From July 10 to 12, 2026, the Contrada Polveriera brought the Festival of Ancient Flavors and Acquacotta back to Piazza Agostino Chigi in Allumiere. Three days dedicated to the peasant cuisine of the Tolfa region, featuring handmade acquacotta, gnocchi, and beghe, with nightly live music and street performers.

2026 Edition

The Festival of Ancient Flavors and Acquacotta returned to Allumiere from Friday, July 10 to Sunday, July 12, 2026, in Piazza Agostino Chigi, in the heart of the historic center. Once again, the event was organized by the historic Contrada Polveriera, which offered a journey through the rustic dishes of the Maremma and local tradition.

The star was the famous acquacotta, accompanied by handmade gnocchi and beghe, tripe, sausages, Maremma-style stew, and beans with pork rinds. The evenings were enlivened by live music and street performers, with the La Fraschetta area dedicated to local cured meats, cheeses, and wines. The event concluded with an excellent turnout.

Location

Piazza Agostino Chigi, historic center of Allumiere (RM), Lazio. The village is located in the Tolfa Mountains, about 85 km from Rome and a short distance from Civitavecchia.

How to get there

By car: from Rome, take the A12 motorway to Civitavecchia, then follow the SP1a towards Allumiere; from Viterbo, take the provincial roads of Tuscia. By train: Civitavecchia station on the Rome-Pisa line, then local bus connections to the inland area.

Admission and dining

Free admission. Dishes can be purchased at the food stands set up in the square and in the covered areas. Arriving early in the evening is recommended to secure a seat.
