'Fioreta' is the liquid ricotta obtained from the first stage of processing skimmed milk from alpine pastures during ricotta production. A humble yet precious dish that brings the flavor of alpine pastures to the table.
The Taste of the Alpine Pasture
The festival originates from the collaboration with the Malgari dei Ronchi, the shepherds from the Ronchi contrada who preserve the mountain dairy tradition. Along the streets of the town center, transformed into a sort of ethnographic museum displaying ancient tools and furnishings of rural life, the food pavilion serves 'gnochi con la fioreta' to all, accompanied by music, dancing, and the joy of village festivals.
