The signature dish of Alta Irpinia takes center stage in Sant'Andrea di Conza
The Cavatello Festival is one of the most anticipated summer events in Sant'Andrea di Conza, a small town in the province of Avellino, Campania, overlooking the Ofanto Valley on the border with Basilicata. A single night in August is enough to fill the village center: the community gathers around a humble yet iconic dish, the cavatello, which here is not just a culinary curiosity but a piece of family history.
The event is promoted by the Youth Forum of Sant'Andrea di Conza in collaboration with the municipal administration and local associations. The town's youth handle the organization, cooking, and hospitality, often working alongside the women who have been making cavatelli at home for generations. This passing of the torch between generations gives the festival its most authentic character.
Cavatello is born from the simplest combination possible: water and flour, with no eggs. The dough is cut into small pieces and «hollowed out» (cavato) with the fingertips on a wooden board to achieve the characteristic concave shape that holds the sauce. It is a slow process, passed down from mother to daughter in Sant'Andrea di Conza, and during the festival, it is recreated by hand in industrial quantities to serve the entire square.

The pasta is accompanied by other Irpinian products: caciocavallo cheese, local cured meats, Irpinian wines, and the gastronomic specialties of the Alta Irpinia area, a land of Fiano, Greco, and Taurasi.
The festival doesn't end at the table. After the food is served, the evening continues with a live concert and, typically, a DJ set that turns the square into an open-air party until late at night. Over the years, the event has hosted popular Irpinian folk and singer-songwriter groups, beloved by the local public, and the musical program is now as much a part of the event's identity as the menu itself.
The heart of the event is the Largo Ginnasiale «Prof. Francesco Iannicelli», in the town center: an intimate space with outdoor tables and a stage set up at one end. The «town square festival» format makes it particularly suitable for families and groups of friends, who arrive from neighboring towns in Alta Irpinia and nearby Basilicata.
The Cavatello Festival is part of the Recreational and Cultural Summer of Sant'Andrea di Conza, a historic festival that has enlivened the village for nearly half a century between late July and mid-August with theater, music, meetings, and the Book Festival. Those arriving for the festival will find shows at the Episcopio Theater and author-led evenings that make this small Irpinian town one of the most culturally active centers in the province of Avellino.
With just under two thousand inhabitants at an altitude of 660 meters, Sant'Andrea di Conza preserves the Episcopal Palace and the Episcopio complex, the Museum of Arts and Crafts, and the memory of the furnace and the «maggiaiole». Rebuilt after the 1980 Irpinia earthquake, the village has made cultural life and conviviality its hallmark: the August festival is its most immediate expression.
The 2026 Cavatello Festival will take place on Sunday, August 9, in Sant'Andrea di Conza, in the province of Avellino. The event is confirmed as part of the 2026 Recreational and Cultural Summer, the municipal festival running this year from July 31 to August 22, which pairs the festival with author-led theater, concerts, and the late-August Book Festival.
As per tradition, the evening revolves around cavatello, the handmade water-and-flour pasta that is the town's signature dish, served with tomato sauce and fried breadcrumbs or with broccoli. Alongside the pasta, other typical Alta Irpinia products will be available, from caciocavallo cheese and cured meats to local wines.
The evening's program will be completed by a concert by the band Rosarossa, which will bring live music to the square after the food distribution. Precise times, the final menu, and prices will be announced by the organizers in the days immediately preceding the event.
By car: from the A16 Naples-Canosa motorway, take the Lacedonia exit or travel along the SS 7 Appia and SS 691 Fondo Valle Sele. Sant'Andrea di Conza is about 70 km from Avellino and around 40 km from Potenza. The reference train station is Contursi Terme, which is then only connected by road: the car remains the most practical means of transport.
