Gargano's cialledda: a blend of rustic flavors and solidarity in Mattinata
This edition has not been confirmed by the organiser to date. We recommend checking before going.
In the heart of the Gargano summer, the Acquasale Fredda Festival stands out as one of the most beloved events in Mattinata, a town in the province of Foggia perched on the Gargano coast in Apulia. Organized by the Mattinata AVIS (Italian Blood Volunteers Association), the event has a dual purpose: to celebrate a staple of Apulian peasant cooking and to promote the culture of blood donation, which is particularly vital during the summer months when reserves tend to run low.
The absolute star of the evening is acquasale, also known as cold cialledda: an ancient, humble dish from the Apulian and Gargano tradition, born from the need to repurpose stale bread. The recipe combines a few simple, genuine ingredients:
It is a refreshing dish, perfect for warm summer evenings, that tells the story of the local farming culture and the ability to transform humble ingredients into a signature flavor. During the festival, visitors can enjoy acquasale prepared according to the local recipe in a convivial, festive atmosphere.
Beyond the tastings, the event features entertainment with folk groups and traditional Mattinata performances, bringing the evening to life with popular music and dance. The spirit of solidarity remains at the core: AVIS uses this opportunity to raise community awareness about the importance of blood donation, often pairing the festival with dedicated collection days.
In recent years, the festival has been held along Corso Matino, at the Monte Saraceno Belvedere, a scenic viewpoint overlooking the town and the coast. Monte Saraceno is also famous for its significant Daunian necropolis, a millenary testament to the history of the Gargano, which makes the event's setting even more evocative.
The Acquasale Fredda Festival is part of the rich summer calendar of the Municipality of Mattinata, which treats residents and tourists alike to a variety of art, music, flavors, and traditions every year. Nestled among Mediterranean scrub, ancient olive groves, and the beaches of the Gargano, Mattinata is an ideal destination for those looking to discover the most authentic side of Apulia: a land of charming villages, crystal-clear seas, and a gastronomy that is simple yet steeped in history.
The dates for the 2026 edition of the Acquasale Fredda Festival have not yet been announced. The event, managed by the Mattinata AVIS, is traditionally held in July as part of the Municipality's summer events, featuring the tasting of acquasale (cialledda) and moments of music and folklore. To find out the final date, time, and program, we recommend following the official updates from the Municipality of Mattinata and the local AVIS branch.
