About Tortello Festival

The tortello of Terzorio is an ancient recipe, once almost disappeared, which the small village of the Riviera dei Fiori has rediscovered and celebrated. Swiss chard, trombetta courgette, marjoram and onion, combined with rice, milk and local oil, create a flavorful filling that tells the peasant memory of Terzorio. During the festival, you can witness a live demonstration of its preparation and taste the tortelli at the stands, in a convivial evening in the heart of one of the smallest municipalities in the province of Imperia.

A rediscovered recipe

The Terzorio Tortello Festival celebrates an iconic dish from the small village of Terzorio, in the province of Imperia: the Terzorio tortello, a traditional recipe that was once almost completely lost and has now been rediscovered and promoted by the community.

The traditional filling

The tortello is distinguished by its flavorful filling, made with Swiss chard, trombetta courgette, marjoram, and onion, combined with rice, milk, and local oil. A combination that tells the story of the Riviera's peasant cuisine and the shared memory of Terzorio's inhabitants. The municipal administration has initiated the process for the recognition of De.Co. (Municipal Designation) to protect this gastronomic heritage.

During the festival evening, you can witness a live demonstration of the tortelli preparation, while the stands offer bar and catering services. An intimate and authentic event, perfect for discovering one of the smallest inland municipalities of Imperia and its most genuine flavors.
