The Pansarola and Zabaglione Festival, active since 1962, makes it the star of a celebration that attracts food lovers and the curious into the village's narrow streets.
The heart of the festival is the tasting of the pansarola, served warm and accompanied by zabaglione, the cream made from eggs, sugar, and wine. It's a delicious pairing that forms the common thread of a day of celebration through the cobblestone streets and small squares of the village, where the preparation of the dessert becomes a collective ritual and an occasion for the entire community to gather.
The Pansarola Festival is listed among the Authentic Events of Liguria, a recognition that highlights its identity value and deep-rooted tradition. The 2026 Pansarola and Zabaglione Festival takes place in Apricale in September, following the tradition of holding it on the second Sunday of the month. Recognized among the Authentic Events of Liguria and funded by the Region, the festival offers the tasting of pansarola – the sweet fritter prepared by the village women – accompanied by zabaglione, amidst the narrow streets of the historic center.

By car: take the A10 motorway, exit at Bordighera or Ventimiglia, then take the road towards the hinterland to Apricale. By train: Bordighera or Ventimiglia station, then take a bus.
