The culinary excellence of Tuscia showcased in the village of Sutri
The Spring of Flavours made its debut on May 30th and 31st, 2026, in the historic centre of Sutri, a village in the province of Viterbo overlooking the Via Francigena. The event is promoted by the Municipality of Sutri with funding from Arsial โ Lazio Region, in collaboration with the Rieti Viterbo Chamber of Commerce and the Sutri Pro Loco. The goal is clear: to enhance the gastronomic and agricultural heritage of Tuscia by turning the town into a showcase for quality produce, starting with products bearing the Tuscia Viterbese brand, which were present in Piazza del Comune throughout the event.
Among the absolute stars is the Regina di Sutri bean, a legume symbolic of the area to which a specific taste workshop is dedicated. Alongside it, you will find cheeses from Slow Food Presidia, Tuscia wines, aromatic and wild herbs, legumes, preserves, and vegetable products from local farms. On Sunday, the small squares of the historic centre hosted a selection of local producers โ from Semi di Tuscia to L'Isola del Formaggio, from Fattoria Faraoni to Agrifarm, Perle della Tuscia, and Nativa Bio โ for a widespread market that highlights Viterbo's agricultural biodiversity.
The educational heart of the event is curated by Slow Food Viterbo and Tuscia, which hosts numerous initiatives dedicated to taste education, agricultural biodiversity, and the promotion of local producers: workshops for children at the Lavatoio, guided cheese and wine tastings in Piazza del Comune with FISAR experts, seminars on aromatic herbs, and show cooking with local chefs. A programme designed for all ages, where even the youngest can learn to recognise seasonal products through play.
The two-day food and wine event crowns the calendar of Sutri in Fiore, the spring festival that adorned the village with floral installations, craft markets, and widespread events from April 18th to May 31st, 2026. During the final weekend, alongside the tastings, the town hosted a vintage car parade, the "Gusta la Poesia" literary event at Palazzo Doebbing with Mita Medici, the awards ceremony for the painting exhibition, and the "Brinda & Griglia" musical evenings featuring beer, sangria, and grilled specialities.
Visiting the Spring of Flavours is also an opportunity to discover one of the most evocative villages in Lazio: the Roman amphitheatre carved into the tuff, the mithraeum, the rock-cut necropolises, and Palazzo Doebbing tell over two thousand years of history. Less than an hour from Rome along the Via Cassia, Sutri combines archaeology, landscape, and rustic cuisine: the perfect formula for a tasty day trip in the Lazio Region.

The programme, largely curated by Slow Food Viterbo and Tuscia, alternated between workshops for children at the Lavatoio, guided tastings of Presidia cheeses and wines, seminars on aromatic herbs, and the final show cooking dedicated to wild herbs. The highlight was the taste workshop on the Regina di Sutri bean, the town's agri-food pride. The weekend brought a beautiful close to the 2026 Sutri in Fiore festival, featuring a vintage car parade, poetry at Palazzo Doebbing, and the convivial "Brinda & Griglia" evenings.
By car: from Rome, take the Via Cassia (SS2) for about 50 km, a one-hour drive; parking is available near the historic centre, though it is best to arrive in the morning during festival weekends. By train: take the FL3 RomeโViterbo line to the Capranica-Sutri station, then a bus connection to the village. By bus: Cotral lines from Rome Saxa Rubra towards Viterbo.
The event is free to enter: tastings, taste workshops, and markets in the historic centre are free of charge.
