In the heart of autumn in Soriano nel Cimino, in the province of Viterbo, the majestic Castello Orsini transforms for a weekend into a showcase of flavors. The Castello dei Sapori is a market exhibition that brings the finest food and wine productions of the Tuscia region within its ancient walls, offering visitors a journey through rural traditions and artisanal food crafts.
The exhibition of local producers winds through the castle's halls and courtyards: from extra virgin olive oil to wine from the Colli Cimini, from bread to honey, as well as coffee, organic produce, craft beer, cheeses, meats, and cured meats, all the way to chocolate and jams. This selection tells the story of the agri-food identity of the Viterbo area and its countryside.
The Castello dei Sapori is not just a market: in past editions, the program has hosted live concerts, thematic exhibitions, performances by historical groups, and cultural insights related to the history of the castle and the Soriano community. Admission is free, and the medieval atmosphere of the manor makes the experience particularly evocative, especially as evening falls.
The event takes place within the framework of the famous Sagra delle Castagne (Chestnut Festival) in Soriano nel Cimino, one of the most well-known historical re-enactments and autumn festivals in the Lazio region, which brings the town to life during the first weekends of October with a historical pageant, the Palio delle Contrade, and district taverns. The Castello dei Sapori represents the food and wine chapter of this grand celebration, traditionally hosted on the third weekend of October.

Soriano nel Cimino is located in the province of Viterbo, in the Monti Cimini. By car from Rome, it takes about an hour and a half via the Via Cassia; it is about twenty minutes from Viterbo. The reference train station is Viterbo, which is connected to the village by local bus lines.
