The celebration of Cervia's white gold, between salt pans, historical re-enactment, and gastronomy
Sapore di Sale is the event that transforms the historic center of Cervia, in the province of Ravenna (Emilia-Romagna), into a grand open-air story dedicated to salt every early September. For four days, the city celebrates its white gold, the famous sweet salt of Cervia, a Slow Food Presidium, produced in over 800 hectares of salt pans overlooking the Adriatic. The festival was created to remember and pass down the salt pan civilization, the heart of Cervia's identity for centuries.
The most evocative moment is the Armèsa de Sel, the re-enactment of the salt delivery. At the end of the harvest, the salt workers loaded the white gold onto the burchielle, the typical flat-bottomed boats, and transported it along the Porto Canale to the Salt Warehouses for weighing and storage. During the festival, the burchiella loaded with salt sails up the canal to the Piazzale dei Salinari, where the salt is distributed to the public as a symbol of good luck and prosperity: a gesture that ideally closes the salt season.
The Salt Warehouses, the Piazzale dei Salinari, and the Borgomarina area host a rich food and wine market with dozens of stalls, guided tastings, show cooking with local chefs, and the flavors of Romagna cuisine, from piadina to typical Adriatic products. There are also conferences on Italian salt pans, biodiversity, and climate change, photographic and art exhibitions, as well as concerts and evening entertainment along the Porto Canale quay.
Sapore di Sale is also an opportunity to discover the Cervia Salt Pan, a nature reserve within the Po Delta Park and a habitat for flamingos and numerous bird species. During the festival, guided tours of the salt pan, boat excursions at sunset, and the opening of the MUSA - Salt Museum, which preserves the memory of salt work, are organized. The Camillone Salt Pan, the last salt pan with artisanal processing, tells the ancient gestures of hand harvesting.
Promoted by the Municipality of Cervia and Cervia Turismo, the event is one of the most beloved folklore and tradition events on the Riviera. Combining culture, gastronomy, nature, and historical memory, Sapore di Sale offers visitors a multisensory journey into the salt pan soul of Cervia, perfect for those who want to experience authentic Emilia-Romagna beyond the summer season.
For its thirtieth anniversary, Sapore di Sale returns to Cervia from Thursday, September 3 to Sunday, September 6, 2026. The official dates have been confirmed by the Municipality of Cervia and Cervia Turismo. This year again, the festival celebrates Cervia's sweet salt with the re-enactment of the Armèsa de Sel, the transport of salt by burchiella along the Porto Canale, the food and wine market, exhibitions, conferences, and evening musical entertainment.

By train: Cervia-Milano Marittima station on the Ferrara-Ravenna-Rimini line, a few minutes' walk from the center and the Porto Canale. By car: A14 motorway, Cervia or Cesena Nord exit, then SS16 Adriatica. By plane: Rimini, Forlì, and Bologna airports nearby.
Access to the festival and market is free. Some activities are paid: show cooking and tastings (usually €10), guided tours of the Camillone Salt Pan and admission to the MUSA - Salt Museum (approx. €2), masterclasses and opening dinner by reservation. The salt distribution during the Armèsa de Sel involves a symbolic minimum offering.
