The protagonist of the sagra is the typical Valtellina cuisine, with its most beloved dishes: pizzoccheri, buckwheat pasta with savoy cabbage, potatoes, and cheese; sciatt, the typical buckwheat fritters filled with melted cheese; and bresaola, the cured meat symbol of the valley.
