The Sagra dellu Pizzillu is the gastronomic highlight that, every December 8th, transforms Orvinio into a small capital of Sabina country cuisine. The town of Orvinio, in the province of Rieti, Lazio, has just over four hundred inhabitants and sits at an altitude of about 840 meters: it is the highest inhabited center in the Lucretili Mountains Regional Natural Park and is listed among the most beautiful villages in Italy. Lu Pizzillu is an unleavened pizza, rolled thin and baked until crispy on the edges and soft in the center. The heart of the event is Piazza del Comune, where the food stand managed by the Pro Loco of Orvinio volunteers opens at 12:00 PM. The tasting of lu Pizzillu is accompanied by water or wine and finished with a dessert. As this is an outdoor event in the middle of winter at high altitude, the organizers usually set up a covered and heated structure, ensuring the festivities are not dampened by bad weather.
