The fritters of Dolceacqua and Rossese in celebration
The Sagra dei Frescioi is the gastronomic festival that celebrates one of the most typical dishes of the local tradition every summer in Dolceacqua, in the Nervia Valley, province of Imperia: the frescioi, fritters prepared in various versions, from zucchini to apples to cod.
The evening offers a tasting of freshly fried frescioi, accompanied by Rossese di Dolceacqua DOC, the symbolic wine of the territory and the first Denomination of Controlled Origin in Liguria. Among the narrow streets of the village, the food stalls liven up a village festival focused on conviviality.
The sagra (traditional festival) is an expression of the simple and genuine cuisine of the Imperia hinterland, made with simple ingredients and peasant wisdom. The frescioi, golden and crispy fried, tell a story of eating habits tied to the land and seasons.
The Sagra dei Frescioi is part of Dolceacqua's rich summer calendar, alongside musical events, wine tastings, and village traditions. For those visiting the Ligurian Riviera of Ponente, it's an opportunity to taste a typical dish in a medieval setting of rare beauty.
