In the heart of Alto Molise, the village of Vastogirardi (province of Isernia) dedicates one of its most anticipated summer festivals to a traditional peasant dish: "cazzarieglie e fasciuoli" (in dialect "d'r cazzarieglie e fasciuol"). It is a fresh pasta, rolled entirely by hand, served with beans, pork rind, and a simple tomato and onion sauce.

A dish that tells a story

The preparation, long and laborious, reveals the patience and skill of the women of the past: the dough must be worked, rested, and then carefully shaped in the days preceding the festival, with the participation of multiple generations. It is precisely this link with memory and the culture of the territory that has earned the dish the recognition of the Italian Academy of Cuisine.

Festival in the medieval village

The event takes place in the evocative setting of the Medieval Village and Castle of Vastogirardi, traditionally on the last Saturday of August. In addition to the star dish, stands offer local sausage, dairy products, sweets, and quality wine. The evening concludes with music and a concert, in a celebration that attracts visitors from all over Molise. The organization is handled by the Pro Loco of Vastogirardi.
