Rajche, the festival that brings Subiaco back to its roots

In the Subiaco dialect, rajche means roots: those of trees, but above all, those of a community. This word inspires "Rajche, Roots in Common", a folk tradition festival that enlivens the gardens of the Rocca Abbaziale—the fortress also known as the Rocca dei Borgia that overlooks the village—at the end of every summer. Organized by the Rajche Cultural Association, a group of local volunteers, the event was created to safeguard and pass on the Apennine, agricultural, and pastoral culture of the Aniene Valley, in the municipality of Subiaco, within the Metropolitan City of Rome, Lazio.

The gastronomic walking tour

The culinary heart of the festival is the gastronomic walking tour: a journey of taste through the alleys and gardens in the shadow of the fortress, where every stop offers a sample of the territory. Dishes featured in recent editions include:

• pumpui, traditional Subiaco-style fried zucchini flowers;
• truffle ravioli and gnocchi with nettle or wild boar ragù;
• coratella, cured meats, and sheep's milk cheeses from local shepherds;
• the inimitable Salame del Ré, a sweet symbol of Subiaco;
• fried doughnuts, ciambelle, and pasta with sour cherries (visciola);
• a selection of wines from Lazio and Abruzzo.

The panarda and the Pantasema dance

The most anticipated moment is the panarda, a grand outdoor communal dinner that turns the fortress gardens into one long table: a ritual of hospitality of Apennine origin that evokes the most genuine village conviviality. The festival concludes with the Pantasema dance, an ironic and liberating theatrical and folk tradition accompanied by the saltarello dance and the sounds of zampogna, tamburella, and organetto.

Folk music, poetry, and crafts

Throughout the weekend, the historic center resonates with live folk music, street performances, stornelli, and traditional songs. There is also no shortage of dialect poetry, which keeps the Subiaco language alive, and local craft stalls featuring demonstrations of ancient trades. It is a festival designed for all generations, where the elderly recognize the gestures of their childhood and the young discover them anew.

Subiaco, the village of Saint Benedict

The setting could not be more evocative: Subiaco, one of the most fascinating villages in Lazio, is famous for the Benedictine monasteries of Santa Scolastica and the Sacro Speco, Nero's Villa, and the Rocca dei Borgia, where Lucrezia Borgia grew up. The festival thus becomes an opportunity to visit the village, go rafting on the Aniene river, or hike in the Monti Simbruini Regional Natural Park.

A guardian of identity

Reaching its fifteenth edition in 2025, Rajche is more than just a food festival: it is a cultural project that defends the "roots in common" of a mountain community in an era when traditions risk fading away. A sincere and popular event, with free admission, that restores the flavor of its history to Subiaco.
