Every summer, in the heart of Salento, the town of Surbo (Lecce province, Puglia) dedicates three evenings to one of the most beloved baked goods of the local peasant tradition: the piscialetta. The event, held in the town center and specifically in Piazza Aldo Moro, has become a staple of the Salento festival calendar, attracting visitors from across the province.
The Piscialetta Festival was founded in 1994 by the Women's Cultural Circle and the Sporting Club of Surbo, alongside numerous supporters committed to rediscovering and promoting the town's ancient folk traditions. Since then, the festival has grown with each edition while maintaining its authentic, community-driven spirit: bringing the flavors and heritage of Salento's rustic cuisine back to the public square.
The piscialetta is a thin focaccia baked in a wood-fired oven. It originated from the practice of using leftover bread dough scraps that remained stuck to traditional tools; these remnants were mixed with tomatoes, onions, capers, black olives, extra virgin olive oil, and sometimes a pinch of chili pepper, then kneaded and baked. During the festival, the classic piscialetta is served alongside numerous variations, enriched with caramelized onions, eggplants, bell peppers, zucchini, and local cheeses, all paired with regional wines and craft beers.
Beyond the culinary delights, the festival offers a rich program of evening entertainment: pizzica salentina concerts, folklore performances, children's entertainment, and craft markets featuring handmade products and local souvenirs. It is a perfect opportunity to experience the hospitality of Salento's towns and discover a simple yet iconic specialty tied to the memories of Surbo's families.

The Piscialetta Festival returns to Surbo (Lecce province, Puglia) in 2026, continuing a summer tradition that the town has celebrated uninterruptedly since 1994. The official dates for the 2026 edition have not yet been announced: historically, the event takes place in August in Piazza Aldo Moro. The program, as per tradition, should alternate between tastings of the piscialetta and its variations, alongside pizzica salentina concerts, folklore shows, and markets. Information will be updated as soon as the Municipality of Surbo and the organizers publish the final calendar.
Surbo is located just a few kilometers north of Lecce. By car, it can be reached via the SS613 or the Lecce ring road, taking the Surbo exit. The nearest train station is in Lecce, which is well-connected to Bari and the Ferrovie del Sud Est lines heading toward lower Salento. The nearest airport is Brindisi-Papola Casale, approximately a 45-minute drive away.
