The absolute star is the Grand Piedmontese Mixed Boiled Meat, prepared according to the "rule of seven" codified by the gastronome Giovanni Goria. The seven cuts of meat required by the historical recipe are the tenerone, scaramella, muscolo, sottopaletta, stinco, testina, and lingua. The meats are served with traditional vegetable sides and accompanied by the essential sauces: bagnetto verde (green sauce) and bagnetto rosso (red sauce), the guardians of the most authentic Piedmontese taste.
The meal begins with a trio of appetizers, continues with the mixed boiled meat and its vegetables, and concludes with dessert. The 2nd edition of the Montaldo Scarampi Boiled Meat Gala confirmed the success of its debut, drawing numerous fans of Piedmontese mixed boiled meat to Montaldo Scarampi. The festival, organized by the Pro Loco, took place on Valentine's Day weekend with its usual convivial spirit.
