Every year, for the Feast of Saint Joseph, the Santissimo Salvatore district in Ragusa comes alive with a gastronomic event beloved by the local community: the Mitilugghia Festival, also known as the "Mitilugghia Tasting." The mitilugghia is one of the most iconic preparations of Iblean cuisine. It is a soft fried flatbread made from a simple dough of durum wheat semolina, yeast, water, salt, and extra virgin olive oil. After rising, the dough is divided into small discs and fried in boiling oil, then served hot, seasoned with salt and oregano or scented with rosemary. A sweet version also exists, dusted with sugar, which is particularly popular with children. Once, the grandmothers of Ragusa prepared it as a substitute for bread, which not everyone could afford: a humble dish born from popular ingenuity, now proudly celebrated as a key part of the local identity.

The 2026 edition of the Mitilugghia Festival took place on Sunday, March 15, 2026, starting at 6:00 PM, in Piazza Santissimo Salvatore in Ragusa. Now in its 7th edition, the tasting was part of the rich program for the Feast of Saint Joseph, which animated the neighborhood with masses, the solemn procession with the saint's statue, and numerous community initiatives. In the square, residents and visitors were able to enjoy the mitilugghia prepared according to the traditional recipe: soft flatbread fried in extra virgin olive oil, served hot and seasoned with salt and oregano, as well as the essential sweet variations.
