The Hand-Cut Sausage Festival is the most anticipated gastronomic event in Spinazzola, a town in the Province of Barletta-Andria-Trani (BAT), nestled within the Alta Murgia National Park in Puglia. The event pays tribute to a product that defines the local identity: sausage prepared strictly a punta di coltello (hand-cut), meaning the meat is chopped by hand rather than ground, following a recipe passed down for generations by local master butchers.
The hand-cutting technique is what makes this sausage unique: the meat is chopped by hand, preserving a texture and flavor that industrial methods cannot replicate. During the festival, you can enjoy it in all its forms, prepared by the numerous food stalls set up in the historic center: grilled, pan-seared, served in a sandwich, or paired with local wines and cheeses from the Murgia region.
Beyond the food and wine, the event enlivens the streets and squares of the village with live music, evening DJ sets, and performances. There are also vintage car rallies, which are very popular with visitors, and a large area dedicated to children with free games, entertainment, and bouncy castles set up in Piazza Pignatelli. The festival is designed for audiences of all ages and transforms Spinazzola into a meeting point for the entire community and the many visitors arriving from neighboring towns.
The festival is also an opportunity to explore the natural heritage surrounding the town. Proposed experiences include guided tours of the Bauxite Mines, one of the most striking locations in the Alta Murgia, where the red earth creates almost lunar landscapes. The event is organized by the Municipality of Spinazzola together with the Pro Loco Torre e Pino, who manage the setup of the historic center and the calendar of activities every year.
The Hand-Cut Sausage Festival is traditionally held at the beginning of September and represents the event that ideally closes the summer season in Spinazzola. The dates for the 2026 edition have not yet been officially announced: it is recommended to follow the event's social media channels and the Municipality's communications for updates. Admission to the festival area is free; food and drinks can be purchased at the stalls.

Spinazzola is located in the inland area of the BAT Province, bordering Basilicata. By car, it can be reached via the SS93 and SP230; the Spinazzola train station is served by the regional line. The nearest airport is Bari-Palese, about an hour and a half away.
