Gastronomy, sustainability and innovation in the Dolomites of Cortina
GENESIS is an event dedicated to gastronomy, sustainability, and innovation held in Cortina d'Ampezzo, in the province of Belluno, in the heart of the Dolomites. It is a project conceived by chefs Riccardo Gaspari and Ludovica Rubbini, the driving forces behind SanBrite (1 Michelin star) and El Brite de Larieto, both recipients of the Michelin green star for their commitment to sustainability.
The format unfolds over four days alternating workshops, meetings with Italian and international chefs, experiences and excursions in the Dolomites, round tables, and sports activities. It is not just a gastronomic showcase: GENESIS is an opportunity for collective reflection on the meaning of food, the relationship between cuisine and nature, and the choices made daily by producers, cooks, and consumers.
Each edition revolves around a theme investigating the essence of food and the origins of cuisine, focusing on sustainability and innovation. Exceptional guests, award-winning chefs, and voices from the restaurant world engage in open dialogue, set against the unique backdrop of the Ampezzo Dolomites, a UNESCO World Heritage site, which becomes an integral part of the experience.
