The fritters of Dolceacqua and the Rossese wine in celebration
The Frescioi Festival is the gastronomic celebration that every summer honors one of the most typical dishes of the local tradition in Dolceacqua, in the Nervia Valley, province of Imperia: the frescioi, fritters prepared in various versions, from zucchini to apples to salt cod.
The evening offers a tasting of freshly fried frescioi, paired with Rossese di Dolceacqua DOC, the symbolic wine of the territory and the first Controlled Designation of Origin in Liguria. Among the narrow streets of the village, food stalls animate a village festival dedicated to conviviality.
The festival is an expression of the simple and genuine cuisine of the Imperia hinterland, made with simple ingredients and peasant wisdom. The frescioi, golden and crispy fried, tell a story of eating habits tied to the land and seasons.
The Frescioi Festival is part of Dolceacqua's rich summer calendar, alongside musical events, wine tastings, and village traditions. For visitors to the Ligurian Riviera di Ponente, it's an opportunity to taste a typical dish in a medieval setting of rare beauty.
On Saturday, August 1, 2026, Dolceacqua celebrates the Frescioi Festival. The village's food stalls will offer freshly fried frescioi, in zucchini, apple, and salt cod varieties, accompanied by Rossese di Dolceacqua DOC.

Dolceacqua can be reached from the Ventimiglia or Bordighera exit of the A10 motorway, driving up the Nervia Valley. The historic center is pedestrianized.
