Raw milk cheeses from Valnerina in the medieval village of Vallo di Nera
Fior di Cacio is the exhibition that every June celebrates the raw milk cheeses of Valnerina in the medieval village of Vallo di Nera, in the province of Perugia, one of the "Most Beautiful Villages in Italy". Recognized by ONAF as Umbria's only "Cheese City", the village transforms its alleys into a route of tastings, workshops, and meetings centered around the region's cheesemaking and pastoral culture.
The program combines gastronomic and educational experiences: the "Formaggissima in 3P", a tasting tour with prosciutto, bread, and cooked pecorino; "The Thousand Weddings of Cheese", an educational session by ONAF with pairings of Umbrian wines; workshops on making fresh cheese (primo sale) and mozzarella spinning. On Sunday, the spectacular 80 kg giant ricotta arrives, an iconic moment of the event.
Fior di Cacio is also an invitation to experience Valnerina: rafting on the Nera River, excursions, and trekking along the transhumance routes, donkey rides, theatrical performances, and street art animate the village and its surroundings. A blend of food and wine, nature, and culture that tells the story of a valley where shepherding is still alive.
In recent editions, the exhibition has strengthened its profile with the collaboration of Slow Food â featuring the "Presidia Village" that brings rare and endangered products from various Italian regions to Vallo di Nera â and the Umbria Chamber of Commerce, positioning the village as a new national reference point for artisanal raw milk cheeses.
Fior di Cacio 2026, the XXII edition, will bring the Valnerina raw milk cheese exhibition to life in the village of Vallo di Nera on June 13 and 14. This edition is enhanced by collaborations with Slow Food and the Umbria Chamber of Commerce, with the "Presidia Village" bringing rare products from all over Italy to the town. The most anticipated events are confirmed: the "Formaggissima in 3P", ONAF pairings with Umbrian wines, fresh cheese and mozzarella workshops, and the 80 kg giant ricotta.

Vallo di Nera is located in Valnerina, in the province of Perugia, accessible by car via the SS 209 Valnerina road connecting Spoleto and Norcia. The village is pedestrian-only: it is advisable to park in the designated areas at the foot of the village.
