Grandma's lisotti, De.Co. products, protagonists of the San Rocco feast in Val Bormida
In Pallare, a Municipality in the Province of Savona in the Bormida Valley, Grandma's lisotti are the most important specialty of the town. It is a potato flatbread cooked on a griddle, served in the traditional version with a garlic-based sauce and, in more recent versions, with delicious ingredients such as gorgonzola, Nutella, jam, and more. The product has obtained the Municipal Designation (De.Co.), a recognition that protects its recipe.
The Lisotto Festival is held in mid-August, on the occasion of the San Rocco celebrations, at the Pallare sports facilities. The food stand opens every evening, and also for lunch on Sundays, offering Grandma's lisotti and many other local specialties. Each evening is enlivened by live music, in a festive atmosphere that lasts for several days.
Now in its fortieth edition, the Lisotto Festival is one of the most cherished summer events in the Savona Bormida Valley. Organized by the Pro Loco Pallare, it promotes an identity product and the art of poor cuisine of the past, when potatoes and a few other ingredients became a exquisite dish. For those visiting the Savona hinterland in mid-August, it is an opportunity to discover a unique flavor and a welcoming community.
For 2026, the Lisotto Festival with the San Rocco celebrations is renewed in Pallare in mid-August, expected for its 44th edition. The Pro Loco is re-offering Grandma's lisotti, a De.Co. product, along with other local specialties, at the sports facilities' food stand.
