Cjarsòns are this for Carnia — thin pasta ravioli with a surprising filling, capable of combining sweet and savory, with herbs, raisins, cinnamon, cocoa, smoked ricotta, and wild mountain herbs, in infinite variations passed down from home to home. In Sutrio, a charming village in the province of Udine at the foot of Monte Zoncolan, this emblematic dish has its own festival: the Festa dei Cjarsòns.

Ten tasting islands in the village

The event's format is as simple as it is evocative: the village transforms into a gastronomic journey with ten tasting islands, set up in the most characteristic corners of Sutrio by as many local associations. Each station offers its own interpretation of cjarsòns, allowing visitors to stroll through courtyards and small squares, tasting different recipes and discovering how rich and personal this Carnic tradition can be.

Not just tastings

Alongside the tasting islands, the festival offers the practical course "Learn to make cjarsòns" to learn how to roll the pasta and prepare the filling, family walks, workshops for children, an artisanal market, and live music. It's a perfect opportunity to discover Sutrio, its shops, and its mountain atmosphere, experiencing one of Friuli's most authentic gastronomic festivals, where cuisine becomes a story of community.
