About Cingul Festival

On the eve of Ferragosto, the small village of Cairano in Alta Irpinia gathers in Piazza Municipio around the dish that defines its identity: li cingul cu la sauzicchj e r frecul, a handmade pasta made only with water and flour, served with local artisanal sausage. The Cingul and Sauzicchj Festival, promoted by the Pro Loco in collaboration with the Municipality, features tastings, local products, regional wine, and live music in one of the most scenic squares in the province of Avellino.

A festival that tells the story of Cairano

Every year, on the eve of Ferragosto, Cairano transforms Piazza Municipio into a large open-air dining room. We are in Alta Irpinia, in the province of Avellino, in a village of just under three hundred inhabitants perched at an altitude of about 770 meters above the Ofanto valley: one of the smallest villages in Campania, and one that has chosen to entrust its collective memory to its cuisine. The Cingul and Sauzicchj Festival was born from the initiative of local women, together with the youth group and the parish, and over the years it has become a reference point for gastronomy enthusiasts, with visitors arriving even from neighboring towns.

Li cingul cu la sauzicchj e r frecul

The dish that gives the festival its name is the most iconic pasta of Cairano's cuisine, known locally as the "festival dish." Its preparation is entirely manual and requires a skill passed down from one generation to the next:

  • Dough: only water and flour, no eggs. The secret lies in the ratio, with a mixture that must remain soft but never liquid, and in the temperature of the water, neither cold nor hot.
  • Cutting: the dough is shaped into "little snakes" and cut with the rar'tor', a traditional tool made by the local blacksmith, to obtain the so-called bigoli.
  • Cavatura: this is the most delicate step, which transforms the bigoli into well-hollowed cingul, capable of holding the sauce.
  • The sauce: the local artisanal sausage, the absolute star alongside the pasta.

In 2015, the Cairano recipe was presented at the Milan Expo, a recognition that brought national visibility to a preparation previously known almost exclusively within families. In the village, there is also a seasonal variant, li cingul r sant Martin, prepared on November 11th and characterized by a greater length: a propitiatory gesture that alludes to the abundance of the future harvest.

How the evening unfolds

The formula is the tried-and-tested one of Irpinian festivals: simple and convivial. The stands open in Piazza Municipio around 8:30 PM, when the August heat has subsided and the village fills with people. In addition to the signature dish, one can taste other traditional local preparations, artisanal products, and wine from the area, in a part of Irpinia that has a long-standing tradition of viticulture. The evening is always accompanied by live music: over the years, groups like Armonia Italiana and I Condor have performed in the square, with popular repertoires that keep the piazza lively until late at night.

The suspended village of Alta Irpinia

Those who arrive for the festival find much more than just a dinner in the square. Cairano is known as the "suspended village": the town is dominated by a panoramic cliff overlooking a vast horizon of badlands and hills, where aeolian organs have been installed that play with the wind. High up, there are traces of the medieval castle, with origins dating back to the 11th century, while in the town center stands the mother church of San Martino Vescovo, featuring 18th-century Baroque decorations and restored frescoes. Beneath the houses, there is also a network of over one hundred caves and underground cellars carved into the rock, historically used to store and age wine and cheese.

A village that creates culture

Despite its tiny size, Cairano has a surprising cultural life. The village is linked to the figure of theater director Franco Dragone, who was born here, and to the Cairano 7x project, which has brought shows, artistic residencies, and experiments to Irpinia; it is also one of the locations crossed by Vinicio Capossela's Sponz Fest, the festival that enlivens Alta Irpinia every end of summer. Alongside the Ferragosto festival, the local calendar includes other events such as the Sagra r'lu Pizzirr Fritt, the Ipogea exhibition dedicated to the caves, and Kairos, Tempo di Vino, an experience that combines tasting and landscape.

Why it's worth the trip

The Cingul and Sauzicchj Festival is not a mass-market event and does not aim to be: it is a community celebration where young people, parents, and the elderly work together to bring back to the table a manual skill that risked being lost. For a visitor, it is the most direct opportunity to understand the "cucina povera" (peasant cuisine) of the Campanian hinterland, on an August evening when the square of a village of three hundred souls becomes the center of the world.

Cingul Festival — edition 2026

The 2026 edition of the Cingul and Sauzicchj Festival has not yet been officially announced. The event is traditionally held in August in Piazza Municipio in Cairano, on the eve of Ferragosto, and is organized by the Pro Loco in collaboration with the Municipality. The 2026 calendar of Irpinian Pro Loco associations published by the UNPLI of Avellino currently only lists the Kairos, Tempo di Vino event for Cairano. We recommend checking dates and programs on the Pro Loco channels before traveling.

2026 Edition: what we know

At the time of publication of this page, no official announcement has been released regarding the 2026 Cingul and Sauzicchj Festival in Cairano. Neither the date nor the program for the evening has been published, and the event does not appear in the main summer calendars of Alta Irpinia for the current season.

The editions documented in recent years have taken place with great regularity on the eve of Ferragosto, in Piazza Municipio, with the stands opening in the late evening and live music accompanying the tastings. If 2026 follows the custom, the event will therefore be scheduled for mid-August, but until the Pro Loco Cairano publishes the flyer, we cannot confirm it.

Where it takes place

Piazza Municipio, in the center of Cairano (AV), a few steps from the Town Hall on Via Roma. The area is pedestrianized during the event.

How to get there

By car: Cairano is about 67 km from Avellino, reachable via the SS7 Ofantina bis and then the SP44. From Naples, take the A16 motorway and exit towards Alta Irpinia. The final access road to the village is a mountain road with hairpin bends: drive carefully, especially when returning at night. Parking is available in the areas on the outskirts of the center, which fill up quickly on festival evenings.

Tips

At an altitude of 770 meters, August evenings can be cool: it is advisable to bring a light sweater. Portions are collected at the Pro Loco stands and consumed at the tables set up in the square. Accommodation in Cairano is very limited: those staying overnight will find more options in Calitri, Sant'Andrea di Conza, Conza della Campania, or Lioni.
