The festival celebrating Surano's signature dish, featuring spicy flavors and Salento's pizzica music
The Carne alla Turca Festival is the gastronomic event that every summer puts the spotlight on the signature dish of Surano, a small town in Lower Salento in the province of Lecce, in the heart of Apulia. Organized by the Amici della Carne alla Turca association, together with the local community, the event transforms the streets and squares of the historic center into a large open-air restaurant, where residents and tourists gather to enjoy a specialty that defines the town's identity.
Carne alla turca is a meat stew with a bold, spicy flavor, linked to the history of the old local tavern and the creativity of its owner, Peppino. Popular tradition tells several versions of the origins of the dish and its curious name: it is said that upon tasting the particularly spicy dish, someone exclaimed that meat this strong "wouldn't even be eaten by the Turks." This remark supposedly gave birth to the name that still identifies the recipe today. At the festival, spice is added only upon request, making the dish accessible to all palates.
In addition to the carne alla turca, served in a characteristic custom-made earthenware bowl featuring the festival logo that you can keep as a souvenir, the stands offer numerous traditional Salento dishes: meat chunks, bruschetta, eggplant parmigiana, peperonata, sausage, and sweets from the Lecce pastry tradition. The event has been awarded the Ecofesta Puglia label and is part of the Associazione Sagre del Capo di Leuca circuit: dishes are served with biodegradable disposable containers and cutlery, in the spirit of sustainability.
The evenings are enlivened by Salento folk music, with concerts by pizzica and taranta groups that keep the squares dancing until late at night. Over the years, the festival has hosted well-known bands from the local folk scene, confirming its status as a collective celebration that combines great food, tradition, and live entertainment.
With the Carne alla Turca Festival, Surano joins the rich calendar of summer festivals in Salento, offering visitors the chance to discover an authentic village in the Lecce hinterland, far from the major coastal tourist flows but close to the destinations of the Capo di Leuca. Part of the proceeds from the evenings is donated to local charity initiatives.
The 2026 Carne alla Turca Festival is scheduled for August 3 in Surano, in Lower Salento. As per tradition, the organizing association will offer the famous carne alla turca at the stands in the historic center, served in the festival's custom-made bowl, along with traditional Salento dishes and evenings of folk music and pizzica. The dates are currently known, while the complete musical program will be announced in the weeks leading up to the event through the official channels of the festival.
The festival is held in the historic center of Surano (LE), in the area of Via Due Luglio and the town squares. Free admission; food and drinks are available for purchase at the gastronomic stands.
Surano is located in Lower Salento, in the Lecce hinterland. By car, it can be reached via the SS275 road in the direction of Maglie / Capo di Leuca. The nearest train station is served by the Ferrovie del Sud Est in the area of Maglie and neighboring towns.
The stands open in the evening; live music usually starts late in the evening. The spice is added only upon request.
