Just a few kilometers from Florence, in the countryside of Lastra a Signa, comes the first Bucolic Fermentation Festival: a day entirely dedicated to the art of fermented foods and drinks. On Sunday, June 14, 2026, from 10 am to 9 pm, over twenty producers from across Italy will bring the Circolo Culturale Agricolo Bucolica to life with a market, hands-on workshops, guided tastings, talks, yoga, and live music. Featuring kimchi, miso, kombucha, ciders, tempeh, and plant-based cheeses, this event weaves together taste, health, and rural culture. Free admission.

The first Fermentation Festival at the gates of Florence

On Sunday, June 14, 2026, the town of Lastra a Signa, in the province of Florence, hosts the first edition of the Bucolic Fermentation Festival, an event designed for producers, enthusiasts, and the curious alike. The setting is the Tuscan countryside, just ten kilometers from the city, at the Circolo Culturale Agricolo Bucolica, an organic farm founded in 2019 by brothers Filippo and Riccardo Zammarchi, now conceived as a small integrated ecosystem of fields, vegetable gardens, an osteria, and a cultural space.

Over twenty producers from all over Italy

The heart of the day is a fermentation market open from 10 am to 7 pm, bringing together more than twenty artisanal producers from every corner of the country. Stalls will feature kimchi, miso, cider, kombucha, tempeh, fermented vegetables, mead, and water kefir: a journey into the many souls of fermentation, an ancient technique rediscovered today as a tool for flavor, preservation, and wellness. Alongside the market, a book corner curated by Libreria Malaparte offers a selection of texts dedicated to the theme.

Workshops, tastings, and living culture

For those who want to learn how to ferment at home, the program includes a series of hands-on workshops with limited spots led by industry experts: fermented vegetables, miso, kimchi, and kombucha. These are complemented by guided tastings of tempeh, kombucha, ciders, and plant-based cheeses. Workshops and tastings require mandatory registration. The day is enriched by farm tours, yoga sessions for adults and children, talks dedicated to new ways of drinking, and, in the evening, live music.

Eat and drink well all day long

From 10 am to 9 pm, the farm bar will be open, serving kombucha, natural wines, craft beers, and cocktails, while the kitchen will offer pasta made from ancient grains and dishes centered on fermented ingredients. It is an opportunity to discover how fermentation can take center stage at the table, balancing rural tradition with contemporary experimentation.

An event for Tuscany

Promoted by the Azienda Agricola Bucolica together with the Ferment'action collective, and supported by the Municipality of Lastra a Signa, the festival brings a thematic event to Tuscany that is still rare in the Italian food and wine scene.
