The Bread and Salicornia Festival is one of the most cherished summer gastronomic events in Cagnano Varano, a town in the Gargano area of Foggia province, overlooking the vast Varano Lagoon. The event was created to rediscover and celebrate two elements deeply rooted in the local culture: the bread of the peasant tradition, once the staple of daily life, and salicornia, the wild plant that grows along the salty banks of the lake.
Salicornia is an annual plant with slender, fleshy stems rich in minerals, which thrives in the wetlands and salt marshes of the lagoon. Also known as "sea asparagus," it has been a part of the humble cuisine of Cagnano's fishing and farming families for centuries. The festival brings it back to the center of the table, featuring dishes prepared according to old-fashioned recipes and sharing the ancient bond between the community and its lake.
The star of the evening is acquasale, the classic Southern Italian peasant dish made of soaked stale bread, seasoned with oil, tomatoes, and salt, which is offered as a free tasting at the stalls alongside other local products. The event features food stalls, art exhibitions in the historic center, workshops for children, and folk music and dancing that bring the square to life until late at night.
The festival is also the perfect opportunity to visit Cagnano Varano and its view over the lagoon, the largest coastal lake in Italy. The historic center, with its narrow alleys and the Franciscan Cloister, provides the backdrop for an event that blends food and wine, folk traditions, and the identity of the Gargano territory in a festive atmosphere open to families and visitors. The festival is held in the historic center of Cagnano Varano (FG), in the Gargano region. In recent editions, stalls and activities have been concentrated between the Franciscan Cloister (former Town Hall, Piazza Giannone) and the streets of the center.
Cagnano Varano can be reached via the SS693 and SS528 roads that connect the Gargano; it overlooks the Varano Lagoon, between Ischitella and Carpino. The reference railway stations are along the line to San Severo, from where you can continue by bus or car.
Admission to the event is free. Tastings of acquasale are provided free of charge; other dishes and local products can be purchased at the stalls. Comfortable summer clothing is recommended for the outdoor evening.
