The Bread and Salicornia Festival is one of the most cherished summer gastronomic events in Cagnano Varano, a town in the Gargano area of Foggia province, overlooking the vast Varano Lagoon. Salicornia is an annual plant with slender, fleshy stems rich in minerals, which thrives in the wetlands and salt marshes of the lagoon.
