The Agira Cassatella Festival is the autumn event that the Municipality of Agira, in the province of Enna, dedicates to its most representative sweet. For three days, the center of this Sicilian village comes alive with aromas, flavors, and traditions centered around the cassatella, a specialty that has defined the gastronomic identity of this part of central Sicily for generations.
The cassatella of Agira is a pastry with ancient origins: a crescent-shaped shell of tender shortcrust pastry, golden and dusted with icing sugar, containing a rich and fragrant filling. Traditional ingredients include cocoa, toasted and ground almonds, chickpea flour, sugar, and lemon zest, sometimes with a hint of cinnamon. Variations, such as pistachio, are also available. The use of chickpea flour as a natural and economical thickener reflects the meeting of noble ingredients and popular cuisine that gave birth to this recipe.
The cultural and economic importance of the pastry led the municipal administration to recognize it with the Municipal Designation (De.Co.); the cassatella is also listed among the traditional Sicilian agri-food products (P.A.T.).
The festival transforms Agira into a grand culinary trail, with a large street food area set up at the Villa Comunale Exhibition Area and throughout the village streets. Alongside tastings of cassatelle and other local specialties, the program includes:
