About Acqua e Sale Festival

Every summer, Località Chianca, a small marina in Gagliano del Capo, hosts the Acqua e Sale Festival and Sailor's Feast: a Salento tradition dedicated to the sea and the humble, authentic cuisine of the Capo di Leuca. The star of the show is 'acqua e sale', an ancient peasant dish made with soaked frisella bread, tomatoes, olive oil, and oregano, served alongside fresh local catch. With food stalls, music, and the charm of a seaside village, it is one of the most beloved festivals at the southern tip of Salento, in the shadow of Capo di Leuca.

A festival between sea and tradition

In the heart of summer, when Salento experiences its longest nights, Località Chianca — the marina of the town of Gagliano del Capo, in the Province of Lecce — comes alive for the Acqua e Sale Festival and Sailor's Feast. It is a traditional folk event that blends two souls: the peasant roots of 'cucina povera' and the maritime spirit of a village overlooking the Adriatic, just steps from the southern tip of Puglia.

The festival was born from a desire to celebrate the roots of this land: the sea that fed generations of fishermen and the countryside that invented simple, ingenious dishes. For one evening, the marina fills with long tables, aromas, and voices, in a convivial atmosphere that is the true hallmark of the festivals in the Capo di Leuca area.

Acqua e sale, the signature dish

The festival's name recalls one of the most ancient and iconic dishes of Salento: acqua e sale. Originally the meal of the humble — stale bread softened in water and seasoned with a pinch of salt — it was later enriched in the summer months with whatever the garden and the table offered: ripe tomatoes, extra virgin olive oil, oregano, onions, and, where possible, the frisella, the twice-baked bread that is 'soaked' in water before being topped. It is the essential, authentic taste of Salento cuisine, and the festival makes it the absolute protagonist among the food stalls.

The Sailor's Feast

The peasant soul is joined by the spirit of the sea with the Sailor's Feast, dedicated to those who made fishing and life on the water their trade and identity. The evening pays homage to the maritime community of Chianca and the nearby marinas with festivities, live music, and specialties based on the local catch, in a blend of land and sea flavors that tells the story of the ancient balance of this corner of Salento.

Where it takes place: Località Chianca

The event is held in Località Chianca, along Via San Francesco d'Assisi, one of the small coastal marinas belonging to the territory of Gagliano del Capo. The town is located at the extreme south of Puglia, in the Capo di Leuca, a short distance from Santa Maria di Leuca and the striking Ciolo gorge: a setting of cliffs, crystal-clear sea, and living traditions, ideal for enjoying the festival after a day of sun and swimming.

By car: take the SS275 towards Santa Maria di Leuca, following signs for Gagliano del Capo and its marinas. The nearest train station is Gagliano-Leuca (Sud-Est line). Parking is available in the areas adjacent to the location.

Admission and tips

Admission to the festival is free; food and drinks can be purchased at the food stalls. As this is an outdoor evening event near the sea, a light sweater is recommended for the evening.
