About Tripe Festival

The Tripe Festival returns to Fucecchio, in the province of Florence, for two evenings of celebration on the panoramic Poggio Salamartano. Organized by the Nobile Contrada Sant'Andrea as part of the historic center's summer festival, the event celebrates one of the most beloved dishes of Tuscan tradition: tripe, cooked according to old-fashioned recipes, alongside lampredotto, mixed grills, and many other local specialties. Free admission, kitchen open from the evening, and live music to end the day in high spirits.

On the hill of Poggio Salamartano, in the heart of the historic center of Fucecchio (province of Florence, Tuscany), the Tripe Festival takes place every year in June, standing as one of the most cherished gastronomic events of the Fucecchio summer. Two evenings entirely dedicated to showcasing a dish that tells the story of the popular and rural soul of Tuscan cuisine: tripe, prepared following recipes passed down from generation to generation.

A symbolic dish of Tuscan tradition

Tripe has always been a cornerstone of the so-called cucina povera (peasant cooking) of Tuscany, capable of transforming humble ingredients into a dish rich in flavor. In Fucecchio, it is served in several versions, accompanied by the essential lampredotto, the other great offal-based specialty that defines the gastronomy of this area between Florence and the Valdarno. Alongside traditional dishes, the stands also offer mixed grills, grilled sausages, pasta dishes, side dishes of french fries and beans, and to finish, watermelon and seasonal fruit, all washed down with wine and beer.

Music and conviviality on the Poggio

The Tripe Festival is not just about good food: after dinner, the party continues with live music and entertainment in a climate of great conviviality under the summer sky of Poggio Salamartano. The event is part of the "Sapori & Note sul Poggio Salamartano" (Flavors & Notes on Poggio Salamartano) series, curated by the associations of the historic center, which animates the hill throughout the summer with food, wine, cultural, and musical events.

The Contrada Sant'Andrea and the Palio di Fucecchio

The festival is organized by the Nobile Contrada Sant'Andrea, one of the twelve districts that compete every year in the famous Palio di Fucecchio, the historical horse race that reflects the deepest identity of the community. Festivals and summer parties are a fundamental opportunity for the districts to gather and support their Palio activities: participating in the Tripe Festival also means immersing yourself in an authentic piece of village life.

The fifth edition of the Tripe Festival animates the Poggio Salamartano of Fucecchio during the weekend of June 20 and 21, 2026, as part of the "Sapori & Note sul Poggio Salamartano" series. The event, with free admission, offers the great classics of Tuscan cuisine and gives way to music and dancing after dinner.

Saturday, June 20

  • From 7:00 PM โ€” Opening of the food stands: tripe, lampredotto, mixed grill, sausages, pasta dishes with ragรน or sauce, side dishes of french fries and beans, watermelon and fruit, wine and beer.
  • After dinner โ€” Dance evening with the Ola Latina dance school.

Sunday, June 21

  • From 7:00 PM โ€” Opening of the food stands with the same traditional Tuscan menu.
  • After dinner โ€” DJ set to close the party with music.

Takeaway service is also available. Seating for dinner is limited.
