The fresh pasta festival in the heart of Tuscia

In the height of summer, when Capranica fills with residents and holidaymakers, this village in the province of Viterbo dedicates three evenings to its signature dish: strozzapreti, the hand-rolled fresh pasta that gives its name to one of the most beloved festivals in the Tuscia region. The Strozzapreti Festival is held every year around Ferragosto at the Giggi Iezzi sports center on Via John Fitzgerald Kennedy. It is passionately organized by the Associazione Amici di San Rocco, linking the event to the celebrations of the patron saint on August 16th.

Strozzapreti, the absolute stars

The heart of the festival is the kitchen. Food stalls open every evening, offering strozzapreti prepared according to the ancient Capranica recipe: a simple dough of water and flour, worked and rolled by hand to achieve its characteristic elongated shape. They can be enjoyed in the classic version with tomato sauce or in richer variations, such as with sausage and porcini mushrooms. Alongside the main dish, there is no shortage of other local rural specialties, in a menu designed to accompany the entire evening.
