In May, Monacilioni, a village in Alto Molise in the province of Campobasso, celebrates its gastronomic excellence with the Soppressata Festival, combined with the feast of Saint Benedicta Martyr. Founded in 1977, the festival celebrates a cured meat prepared by hand using ancient methods: hand-ground pork, lard, salt, and whole peppercorns, stuffed into natural casings and smoked over a fire.
