The heart of the event is the livestock exhibitions, which have made the Santerno Fair the largest of its kind in Emilia-Romagna. The absolute stars are the native Romagna breeds, protected by the ARVAR-SIRA association: the Romagnolo Donkey, the Romagnolo Cattle, and the Italian Agricultural Horse TPR, alongside sheep, goats, farmyard animals, and sheepdogs.

Among the initiatives that have contributed to the fair's success are the interregional exhibitions dedicated to Romagna breeds, the donkey biodiversity parades, live milking demonstrations, and equestrian shows like the famous Gran Galร  del Somaro (Great Donkey Gala).

In addition to the animals, the fair features a large trade fair with agricultural companies, nursery owners, artisans, craft breweries, and historical food festival committees from the area. There are also exhibitions of vintage and modern agricultural machinery, taste workshops, educational activities for children, and meetings dedicated to biodiversity and short supply chains.
