Three evenings in Piazza Chiesa dedicated to Sannio sausage and the cuzzetiello
Salsiccia Experience is the food and wine festival that draws enthusiasts of traditional Sannio cuisine to the center of San Leucio del Sannio, a small hillside town in the province of Benevento, Campania, every July. The event is hosted by the Pro Loco «Casali dei Collinari», an association named after the numerous hamlets scattered across the hills between the Sabato valley and the Serretelle ravine. The festival's common thread is a simple, identity-defining product: sausage crafted by local producers.
The format follows the classic Sannio festival style, but with a special focus on the product's story: alongside food stalls, there are preparation demonstrations and tastings designed to show how a well-made mixture is created and why sausage has always been a pillar of the rural Campanian pantry. In just a few years, the event has become a reference point for those seeking the authentic flavors of this part of inland Campania.
The signature dish is the cuzzetiello with sausage meatballs in ragù: the «cuzzetiello» is the end of a loaf of bread, hollowed out and filled with sauce and meatballs—a typically Campanian, informal, and generous way to eat. Around this, the Pro Loco kitchen builds a menu entirely tied to local tradition:
The food stalls open every evening at 8:00 PM, allowing visitors to enjoy the festival during the cooler hours when the hill offers relief from the afternoon heat.
Everything takes place in Piazza Chiesa, the town's central square: kitchens, long tables, and the stage coexist in a small space, resulting in a compact, walkable festival where you inevitably end up sharing a table with locals. This is one of the reasons Salsiccia Experience appeals to visitors: there is no dispersion like in large events, and the contact with the cooks is direct.
The evening program alternates between different genres while remaining firmly rooted in Southern culture: the tammorra and folk dances, the village variety show «La Corrida» featuring local amateurs, and classic Neapolitan songs. It is not a major festival lineup, and that is precisely the point: the shows are created for the town and with the town, and the audience participates rather than just watching.
The municipality of San Leucio del Sannio has just under 3,000 inhabitants and stretches at an altitude of 369 meters on a green hill, about ten kilometers from Benevento. Its territory consists of about twenty small nuclei—Amicoli, Cavuoti, Feleppi, Maccabei, Vardaro, Zolli, and others—the «casali» (hamlets) that give the organizing Pro Loco its name. This scattered structure explains the town's convivial vocation: historically, festivals are the moments when all the hamlets gather in the same place.
Visitors can combine the festival with a day in Benevento, home to the Arch of Trajan, the Roman Theater, and the UNESCO World Heritage complex of Santa Sofia, or a tour through the Sannio vineyards of Aglianico and Falanghina.
Please note the homonymy: San Leucio del Sannio (BN) has nothing to do with the Real Sito di San Leucio, the 18th-century silk village in the province of Caserta. Salsiccia Experience takes place in the province of Benevento, on the hills overlooking the Sannio city.
From Friday, July 10 to Sunday, July 12, 2026, San Leucio del Sannio hosted the fifth edition of Salsiccia Experience, once again in Piazza Chiesa, in the heart of the town. For three days, local sausage producers presented their specialties through food stalls, preparation demonstrations, and tastings.
The absolute star was the cuzzetiello with sausage meatballs in ragù, accompanied by sausage sandwiches, cicatielli, bruschetta, montanare, desserts, fresh watermelon, and a selection of wines and beers. The stalls opened every evening at 8:00 PM, with shows following on the square's stage.
The edition was organized by the Pro Loco «Casali dei Collinari», which presents the event as an opportunity to rediscover authentic local flavors and enjoy three evenings of conviviality.
Food stalls open every evening from 8:00 PM in Piazza Chiesa.
Throughout the three days, there were also demonstrations of sausage preparation and tastings with local producers.
San Leucio del Sannio is located about 9 km from Benevento. By car, it is best to reach Benevento and continue for about ten kilometers on the provincial road towards the town; the festival is held in Piazza Chiesa, in the town center, where you can park on the surrounding streets. By train, you can arrive at the Benevento Centrale or Benevento Appia stations and continue with extra-urban bus connections or by taxi. The most convenient airport is Naples Capodichino, about an hour's journey away.
The food stalls open every evening at 8:00 PM; shows follow in the evening on the Piazza Chiesa stage.
