The absolute star is the salam 'd patata, the traditional Canavese sausage that combines the humbler cuts of pork with boiled potatoes: a rustic yet refined delicacy. With dinners at the Palasagra, taverns in the historic districts, pork butchery demonstrations, a market fair, guided hikes, and conferences on local agriculture, the festival is a journey into the most authentic Piedmontese gastronomic traditions.

When winter wraps its arms around the hills of the Canavese, the small municipality of Settimo Rottaro, in the Province of Turin, lights the stoves and opens its doors for the Salam 'd Patata Festival. For three days, usually during the last weekend of January, the village gathers around its signature product: the potato salami, a humble sausage born from peasant cuisine that blends the less noble parts of pork with boiled potatoes.
