Three days of flavor in the heart of the Canavese, dedicated to the most beloved rustic sausage of Settimo Rottaro
When winter wraps its arms around the hills of the Canavese, the small municipality of Settimo Rottaro, in the Province of Turin, lights the stoves and opens its doors for the Salam 'd Patata Festival. For three days, usually during the last weekend of January, the village gathers around its signature product: the potato salami, a humble sausage born from peasant cuisine that blends the less noble parts of pork with boiled potatoes. A rustic yet surprisingly refined dish that tells the story of centuries of folk wisdom.
The salam 'd patata is a specialty typical of the Canavese, recognized as one of Piedmont's Traditional Agri-food Products. Its preparation requires time and patience: the pork is ground and kneaded with boiled potatoes, seasoned with salt, pepper, and spices, then stuffed and left to rest. During the festival, you can taste it in the traditional taverns set up in the village districts and buy it directly from producers at the agri-food market fair.
The event, sponsored by the Metropolitan City of Turin and organized by the Pro Loco in collaboration with the Municipality, goes far beyond the table. The program alternates between gourmet moments and cultural content: demonstrations of pork processing at the "Nothing of the pig is thrown away" event, craft workshops (from chair caning to historical costumes), conferences on the future of agriculture in the Canavese, and guided excursions to discover the area. A formula that makes the festival a perfect appointment for the whole family.
The Settimo Rottaro festival is not just a simple food and wine event, but a collective ritual that involves the entire village. Dinners at the Palasagra, the square's tavern, the open historic districts, live music, and the convivial atmosphere make it one of the most heartfelt winter festivals in the Canavese. A perfect opportunity to discover an authentic corner of Piedmont and enjoy flavors that are hard to find elsewhere.
The 22nd edition of the Salam 'd Patata Festival was held in Settimo Rottaro from January 23 to 25, 2026, under the patronage of the Metropolitan City of Turin. The program featured the proven formula of a Canavese village festival: themed dinners at the Palasagra, taverns in the historic districts, a market fair with local producers, and the popular "Nothing of the pig is thrown away" event, featuring pork butchery demonstrations. Cultural moments were also included, such as the conference "Cultivating the future in the Canavese", guided hikes, and craft workshops.
Throughout the festival: agri-food market fair, tastings, and live music in the streets.
Settimo Rottaro is located in the Canavese, in the Province of Turin, near Lake Viverone. By car, take the A5 Turin-Aosta motorway exit at Albiano d'Ivrea, then follow local roads. The nearest train station is Ivrea, on the Turin-Aosta line.
