Sagra delle Sfogline

A festival dedicated to the art of pasta dough

Every late summer, in Massa Lombarda, in the province of Ravenna, the Area Feste in Via Rabin transforms into the kingdom of the rolling pin. The Sagra delle Sfogline is an event that celebrates an ancient and typically Romagna gesture: that of the 'sfoglina', the woman who rolls out the dough by hand with a rolling pin until it becomes a thin veil, from which tagliatelle are made. It is a tradition that risks disappearing and that this festival, organised by the Pro Loco of Massa Lombarda, has been preserving and passing down for almost forty years.

The Sfogline Competition

The most anticipated moment is the sfogline competition, the contest that gives the festival its name. Participants – from young women to experienced 'rezdore' – compete in rolling out the dough and cutting it into tagliatelle, judged by a commission attentive to the fineness of the thickness and the regularity of the cut. The organisation provides eggs, flour, and the pastry board, while each competitor brings their own rolling pin and apron. The competition is divided into categories, and registration is free: you register on-site at the Area Feste by the evening of the competition.

The Food Stand

The absolute star at the table is the tagliatelle strictly hand-rolled with a rolling pin and dressed with the traditional Romagna ragù, along with other local culinary specialities. The food stand opens every evening and offers two dinner sittings, in a convivial and popular atmosphere that attracts thousands of visitors from Bassa Romagna and the entire Emilia-Romagna region every year.

Music, Shows, and Village Atmosphere

The evenings are accompanied by live music, piano bar, entertainment, and shows that liven up the festival area until late at night. It is an authentic festival, where good food intertwines with the social life of the village and the pride of a gastronomic tradition that has never been lost in Massa Lombarda.
