The ventricina of Montenero, a PAT (Traditional Agri-Food Product) of Molise with a strong flavour, is the protagonist of a festival featuring tastings, food stalls, and musical entertainment. An event that tells the story of the charcuterie tradition of Basso Molise and the authentic flavours of this corner of the Adriatic coast.

The queen of Molise cured meats

The Sagra della Ventricina celebrates the most renowned gastronomic product of Montenero di Bisaccia, in the province of Campobasso: the ventricina, a cured meat recognised as a Traditional Agri-Food Product (PAT) of Molise. Although widespread throughout the region, the most famous ventricina is precisely that of Montenero.

A cured meat with a decisive flavour

The ventricina of Montenero is produced with lean pork thigh meat, lard, salt, sweet paprika, chilli pepper, and fennel flowers: the pieces are seasoned for about 24 hours and then stuffed into the pig's bladder. The result is a noble cured meat with an unmistakable flavour, still handcrafted today according to local charcuterie tradition.
