A festival that tells of its roots
The Sagra della Polenta e Salsicce takes place in the hamlet of Carbonesca, in the territory of Gubbio (Province of Perugia), in the Alto Chiascio region. Founded in the mid-seventies, it is organized by the Pro Loco Carbonesca and represents a highly anticipated summer event for the local community.
The star dish
The heart of the festival is polenta, presented in all its variations and accompanied by sausages, served with good wine in an atmosphere of joy and lightheartedness. The festival aims to bring a simple, genuine, and flavorful dish back to the table, evoking the roots of the local people: the woodsmen and charcoal burners from whom the hamlet takes its name.
Nine days of celebration
The event lasts for about nine days, between the last Saturday of July and the first Sunday of August, with a rich program every evening: in addition to food, there is space for theatre, themed evenings, games, dancing, and cultural gatherings. Among the most anticipated events is also the National Gathering of Polenta Eaters of Italy (Raduno Nazionale dei Polentari d'Italia), which links Carbonesca to a national network of festivals dedicated to polenta.

The 51st Sagra della Polenta e Salsicce di Carbonesca takes place in 2026 according to tradition, between the last Saturday of July and the first Sunday of August, for about nine days of celebration in the Eugubine hamlet.
Every evening, the Pro Loco Carbonesca offers gastronomy based on polenta and sausages, accompanied by music, theatre, games, and dancing. The 2026 edition is part of the 17th National Gathering of Polenta Eaters of Italy (XVII Raduno Nazionale dei Polentari d'Italia), hosted in Gubbio on June 20, 2026, an event of strong symbolic value for the polenta-loving community.
