During the warm Salento summer, the small village of Specchia Gallone, in the municipality of Minervino di Lecce (Province of Lecce, Apulia), lights up for one of its most anticipated evenings: the Pitilla Festival. It is a simple, authentic local event that has been drawing residents, curious visitors, and tourists vacationing in lower Salento for years, centered around a traditional local product and a lively folk atmosphere.
Pitilla is a flat, thin bread of Arab origin, recognized as a traditional local product. It is kneaded using only water and flour and baked in a stone oven, which gives it its characteristic spongy texture. Served hot and seasoned, it highlights the essential, rustic flavors of Salento cuisine: a humble food rooted in the region's peasant history, which becomes the heart of the entire festival in Specchia Gallone.
Throughout the evening, the pitilla is offered in numerous variations, garnished with local ingredients such as peppers, tomatoes, eggplants, anchovies, and ricotta forte. Alongside this traditional bread, there is no shortage of other classic Apulian street food:

The Pitilla Festival is not just about gastronomy: the evening comes alive with Salento and Mediterranean folk music, pizzica, DJ sets, karaoke, and group dances that involve both young and old. Over the years, various folk groups and traditional bands have taken the stage for a night of open-air celebration in the greenery of Parco Sant'Anna.
The event is organized by the Fratres ODV Group of Specchia Gallone, the volunteer blood donor association, with the patronage of the Municipality of Minervino di Lecce. The festival thus combines taste and solidarity: part of the initiative is dedicated to raising awareness about blood donation, featuring the now-traditional gesture of offering free pitilla and a drink to those who have donated at transfusion centers in the province of Lecce.
Specchia Gallone is one of the hamlets of Minervino di Lecce, a village in lower Salento located just a few kilometers from the Adriatic coast and the seaside resorts of Otranto. Attending the Pitilla Festival means discovering an authentic Salento, far from the most touristy routes, where village festivals still preserve local flavors, dialects, and folk traditions.
The dates and program for the 2026 edition of the Pitilla Festival have not yet been announced. The festival, organized by the Fratres ODV Group of Specchia Gallone with the patronage of the Municipality of Minervino di Lecce, usually takes place in August at Parco Sant'Anna, featuring the pitilla, the typical bread of lower Salento, traditional street food, and folk music.

By car: from Lecce, take the SS 16 towards Maglie and continue towards Minervino di Lecce and Poggiardo; Specchia Gallone is located along the SP 56. The nearest seaside resort is Otranto. The reference railway station is Maglie (Ferrovie Sud Est lines).
