The Valtiberina tortello, cooked on a hot stone slab in the heart of Pieve Santo Stefano
In the heart of the Tuscan Valtiberina, in the province of Arezzo, the village of Pieve Santo Stefano celebrates one of its most beloved events every summer: the Pieve Tortello Festival. Traditionally held on August 14th, the festival transforms the historic center into a vibrant hub of flavor and conviviality, where residents and visitors gather on the eve of Ferragosto to enjoy the town's signature dish.
The Pieve tortello is a traditional peasant pasta, prepared with a thin-rolled dough and stuffed with a closely guarded blend of aromatic herbs and potatoes. Its uniqueness lies in the cooking method: the tortello is strictly cooked on a hot stone slab, a technique that enhances its flavor and gives the pasta a unique texture. A simple yet iconic recipe, passed down through generations, that tells the gastronomic history of this corner of the Tuscan-Romagna Apennines.
Starting in the late afternoon, around 4:30 PM, food stalls open in the historic center. Among the village alleys and squares, you can taste freshly made tortelli accompanied by cold beer and typical Valtiberina products, in a festive atmosphere that lasts until late at night.
The Tortello Festival is traditionally part of Pieve Village, the summer event series that turns Pieve Santo Stefano into a small tourist village for a few days, enlivening the town with events, music, and activities. The festival is one of its highlights, bringing the week of August events to a festive close.
Known as the City of Diaries for its famous Diary Archive, Pieve Santo Stefano sits along the upper course of the Tiber River in the Arezzo Valtiberina, a land of rural traditions, forests, and genuine products. Visiting the village during the festival means discovering an authentic side of the lesser-known Tuscany, where the cuisine still preserves the flavors of the mountains.
The Pieve Tortello Festival returns on Friday, August 14, 2026, in the historic center of Pieve Santo Stefano. Food stalls open from 4:30 PM onwards, featuring tastings of tortelli cooked on a hot slab and cold beer among the village alleys.
In the evening, enjoy traditional dancing in Piazza Santo Stefano with Francesco and his Italian-style orchestra, the grand finale of the Pieve Village week. Reservations are not required.
