In the upper valley of Imperia's hinterland, the tiny municipality of Armo (Province of Imperia) celebrates the feast of Saint Bernard, patron saint of the hamlet of San Bernardo d'Armo, every August 14th. Alongside the religious dimension is the Pan Fritu Festival, dedicated to a specialty of Ligurian peasant cuisine: stale bread re-fried in the territory's extra virgin olive oil.

A 'Waste Not' Cuisine Becomes a Festival

Pan fritu was born from the ingenuity of peasants to waste nothing: stale bread, re-fried in local EVO oil, becomes a flavorful and iconic dish. The festival celebrates its value, transforming a simple 'waste not' recipe into a moment of celebration and pride for the community. Food stalls open in the late afternoon, after the morning's religious services.

An Authentic Ligurian Event

The festival, recognized among the Authentic Events of Liguria, marks the day with a religious service, a procession, and the evening festival. In a hinterland village where life retains ancient rhythms, the Pan Fritu Festival represents a rare moment of collective gathering, capable of attracting residents from nearby hamlets and many who, during mid-August, return to their roots in the hinterland of the Riviera dei Fiori.
