The ritual of warm bread and wine in Galatone, in the heart of Salento
In Galatone, a village in the Salento region of the province of Lecce, the Pagnotta and Wine Festival is much more than a gastronomic feast: it is the living memory of the community's origins. Every year, in early September, the festival coincides with the celebrations for the Madonna della Grazia, drawing thousands of people—locals, Salento residents, and tourists in search of authenticity—to the historic center.
The heart of the event is the pagnotta: a rustic bread kneaded and baked on-site in open-air ovens, where guest bakers take turns. The loaves, served while still warm, are stuffed with ricotta forte and salted sardines—in the most traditional version—and served in the square, where stalls fill up at dusk. There is also a sweet version for those who prefer to end on a high note.
The festival has its roots in an ancient peasant tradition. On the evening of September 7th, on the eve of the great fair on the 8th, travelers reaching Galatone for the market would stop to spend the night, consuming a simple and hearty meal: bread and wine. This gave rise to the ritual that still commemorates that night of anticipation today, among the alleys and squares around the Castello Belmonte-Pignatelli, a historic residence that serves as a scenic backdrop for the entire event.
Accompanying the pagnotta are local red wines, starting with Negroamaro, the signature grape variety of Salento. The entire atmosphere of the patronal feast revolves around the tasting: the illuminations lighting up the streets, the brass band concerts, the religious procession with the responsory, and the traditional fireworks that close the evenings. It is the perfect synthesis of popular faith, conviviality, and gastronomic culture that characterizes the festivals of the Salento hinterland.
The Pagnotta and Wine Festival is an unmissable event for those visiting Puglia in September: a dive into the popular culture of the Municipality of Galatone and the Province of Lecce, where bread becomes a celebration and wine tells the story of the land.
Once again in 2026, Galatone renews its appointment with the Pagnotta and Wine Festival, the gastronomic heart of the celebrations for the Madonna della Grazia. The dates indicated by the Salento event calendars place the festival around September 7-8, with the pagnotta evening traditionally set on the eve of the ancient fair on the 8th.
The detailed program for the 2026 edition has not yet been published by the Municipality of Galatone. It will be released in the weeks leading up to the event and will include, as every year, the baking of bread in ovens set up around the Castello Belmonte-Pignatelli, the tasting of pagnotta stuffed with ricotta and sardines, Salento red wines, as well as the religious and musical events of the patronal feast.
