Night of Ancient Flavors

An evening that tells the story of Ciociaria through its food

The Night of Ancient Flavors is one of the most anticipated events of the summer in Fontechiari, a town of just over a thousand inhabitants in the province of Frosinone, in the heart of the Comino Valley, in southern Lazio. For over fifteen years, the Pro Loco Fontechiari APS, with the patronage of the municipal administration, has brought the village back to its most convivial dimension for one night: the alleys, small squares, and open spaces of the historic center become a single gastronomic route, illuminated and enlivened by music.

The taste trail

The heart of the event is the rustic cuisine of Ciociaria, prepared by Pro Loco volunteers according to recipes that belong to the collective memory of the town. The stalls distributed along the historic center offer a menu that has become a recognizable signature over the years:

• Tagliolini and maltagliati with chickpeas, pasta made according to local tradition;
• Ciociaria soup, a wild vegetable soup that is a symbol of the region's peasant cooking;
• Mutton stew with tomato sauce, a dish linked to the valley's pastoral heritage;
• Sausage sandwiches and grilled arrosticini;
• Fried crespelle fontechiaresi, the sweet-and-savory specialty that defines the evening;
• Local wine and craft beer.

The format is that of a trail: you purchase tickets and walk from stall to stall, without fixed seating, so that the entire village remains part of the experience.

Music, culture, and the village's memory

Alongside the gastronomy, the Night of Ancient Flavors always reserves space for live music: local bands and duos, folk songs from the land of labor, musical entertainment, and evenings with DJ sets and 80s and 90s revivals that accompany the public until late at night. In recent editions, the Pro Loco has also added cultural moments to the stalls, with documentary exhibitions set up in the town's historic spaces—including the 18th-century Palazzo Agostini—dedicated to local history, the years of Italian Unification, and the stories of Fontechiari emigration.

Fontechiari and the Comino Valley

Fontechiari, the ancient Schiavi d'Aquino renamed in 1862, rises along the course of the Melfa River, in a landscape of olive groves and hills that opens toward the National Park of Abruzzo, Lazio, and Molise. It is a territory where peasant civilization is still legible in the terraces, mills, and country churches. The event is part of the Fontechiari Summer calendar, the festival that brings together food fairs, concerts, book presentations, religious feasts, and workshops for children from July to August: the Night of Ancient Flavors represents its highlight, attracting visitors from all over the Comino Valley and the neighboring towns of Arpino, Casalvieri, Posta Fibreno, and Sora.

Why it's worth the trip

It is not a festival dedicated to a single product, but a complete portrait of a town's cuisine, served in the place where it was born. For those visiting Lazio away from Rome, it is a direct and unfiltered way to get in touch with Ciociaria: popular prices, volunteers at the stove, and an entire village that opens its doors. Entry to the event area is free, and you only pay for what you consume.
