Devotion and flavors of Salento: faith and pampasciuni in San Donato di Lecce

The Madonna te li pampasciuni Festival is one of the most authentic expressions of popular tradition in San Donato di Lecce, a town in the Province of Lecce in the heart of Salento, Apulia. The event unites two inseparable souls of this land: religious devotion and the culinary culture linked to a humble yet precious product of the Salento countryside, the pampascione.
The heart of the festival lies in the village of Galugnano, where on the first Friday of March, the Madonna Addolorata (Our Lady of Sorrows) is celebrated, affectionately called by the locals "Madonna te li pampasciuni". The celebration preserves ancient and deeply felt devotional elements: the statue of the Virgin, dressed in black as a sign of mourning, is carried in procession on the shoulders of the local women from the main church to the cemetery chapel, dedicated to the Madonna Addolorata, where Holy Mass is celebrated.
On the day of the festival, by tradition, all the families of Galugnano prepare and enjoy pampasciuni (known in standard Italian as lampascioni, the small bulbs of the Muscari comosum), wild hyacinth bulbs with a bitter taste that grow abundantly in the local fields. It is said that in the territory of San Donato di Lecce, this vegetable was so highly prized that the Bishop of Otranto granted a special dispensation to cook it with pork, despite the Lenten season: a detail that testifies to how deep the roots of this custom run.
Alongside the religious devotion, the Municipality of San Donato di Lecce enlivens the festival with a recipe competition featuring dishes made entirely from pampasciuni, divided into two categories: tradition, which highlights recipes passed down through generations, and innovation, which invites participants to reinterpret the local product with creativity. The participants' dishes are presented to a jury, amidst aromas, conviviality, and folk music.
Food stalls, tastings, and community moments make the Madonna te li pampasciuni Festival an ideal opportunity to discover the identity of the most authentic Salento, where popular faith and peasant cuisine merge into a single story. An event that continues to renew itself thanks to the commitment of the Municipality, local associations, and the San Michele Arcangelo Patronal Festival Committee.
The dates for the 2026 edition of the Madonna te li pampasciuni Festival have not yet been announced. The celebration, which traditionally takes place in San Donato di Lecce and its village of Galugnano at the beginning of March, will return with the procession of the Madonna Addolorata and the pampasciuni recipe competition.
