About Gulitonni Festival

Vallerano, a village in the Viterbo Tuscia region, dedicates a festival to its most iconic pasta: gulitonni, a handmade water-and-flour pasta prepared according to local tradition and served with regional sauces. The first edition of the Gulitonni Festival brings the Giacomo Matteotti Municipal Garden to life from July 10 to 12, 2026, as part of the Ravviva Summer Fest: dinners under the stars, Sunday lunch, live music, DJ sets, sports, and culture, with free entry to all activities.

A festival dedicated to Vallerano's signature pasta

The Gulitonni Festival is the event that Vallerano, a village in the province of Viterbo in the heart of the Tuscia region, dedicates to its most authentic pasta. Gulitonni (also spelled "culitonni") are a handmade water-and-flour pasta, crafted for generations in Vallerano kitchens and served with traditional local sauces. The first edition of the festival debuts from July 10 to 12, 2026, at the "Giacomo Matteotti" Municipal Garden, with the food area managed by the "Le Botti" winery of Vallerano.

Gulitonni, a legacy of peasant cuisine

Simple ingredients and skilled hands: water-and-flour pasta is one of the most genuine expressions of the peasant cuisine of Upper Lazio. In Vallerano, it is known as gulitonni and remains a dish for special occasions, passed down through families and featured in educational workshops during the famous autumn Chestnut Festival. During the festival, gulitonni are served at Friday and Saturday dinners, as well as Sunday lunch and dinner, dressed with traditional sauces and paired with local wines.

At the heart of the Ravviva Summer Fest

The festival is part of the Ravviva Summer Fest, which reaches its second edition in 2026: three days of free entry where sports, music, and culture intertwine in the municipal garden. The program ranges from the presentation of the Lions Alto Lazio Rugby team to an outdoor Olympic boxing gala organized with the Italian Boxing Federation, from the first edition of the Tuscia Street Hybrid urban race to a grappling tournament, as well as DJ sets, live concerts, and an exhibition area dedicated to contemporary art with artists from the province of Viterbo. A format that combines an authentic village festival with a true multidisciplinary summer event.

Vallerano, a village of the Cimini Mountains

The municipality of Vallerano lies on the slopes of the Cimini Mountains, about twenty kilometers from Viterbo, in a Tuscia region defined by medieval villages, chestnut forests, and living traditions. The town is known throughout the Lazio region for its Chestnut Festival and the evocative Night of the Candles: the Gulitonni Festival now adds a summer appointment to the calendar that enhances local gastronomic heritage and brings the historic center and the municipal garden to life in the height of summer.

Why visit

The Gulitonni Festival is the ideal opportunity to taste a pasta that is rarely found outside of Vallerano, in a genuine village festival atmosphere. You can dine outdoors on summer evenings, listen to music until late at night, watch high-level sports events, and discover one of the most authentic villages in the Viterbo Tuscia: all with free entry, in the spirit of Vallerano hospitality.
