The humble water-and-flour pasta that tells the story of Ciociaria, in the historic center of Morolo
The Frascategli Festival is held every spring in Morolo, a small town in the province of Frosinone in the heart of the Ciociaria region, in Lazio. The absolute star is a pasta of disarming simplicity: water, flour, and saltโnothing else. Frascategli are not rolled or cut; they are crumbled. The dough is worked with circular motions on a classic wooden spianatora (pastry board) until it forms tiny, irregular balls that go straight into boiling water. It is survival cooking of medieval origin that has become a symbol of local identity today.
The name comes from frasca, the small twig that was once used to stir and crumble the dough on the board. A humble gesture, repeated for generations in the peasant homes of the Sacco Valley, which the festival has rescued from oblivion and brought back to the public square. During the event, you can watch a live preparation demonstration: the local women, with flour-dusted hands, show visitors how the dish is created.
The beauty of frascategli is that they change character depending on how they are seasoned. At the festival stalls, you will find several versions, all rooted in the Ciociarian peasant pantry:
Alongside the frascategli, you will find other local specialties, starting with ciamellone, the homemade cake perfect for dipping in wine, and typical Ciociarian products brought by local producers.
The festival is not just about food. Along the alleys and small squares of the San Pietro district, traditional folk games take place: terracotta pot smashing and wine-drinking contests, filled with laughter and friendly competition between neighborhoods. The day is accompanied by live folk music, with groups of stornellatori (traditional singers) and local folk bands playing until evening. The red wine from Morolo's vineyards flows generouslyโit is the wine from the surrounding hills, served without ceremony.
The event is organized by the Associazione Vivere San Pietro (formerly the Vivere il Quartiere Committee), a group of volunteers who bring the San Pietro district of Morolo to life all year round. They also host the summer celebrations in honor of the patron saint, famous for the evening of lit candles along Via Porta del Popolo. The spring festival is their season-opening event.
The event traditionally falls in spring, on the Sunday following Easter or between late March and April, starting at noon and continuing until evening. It is an authentic village festival, without elaborate staging: you eat standing up or at tables set up in the street, chat with the cooks, and go home with the recipe in your pocket. For those visiting Ciociaria in spring, it is one of the best ways to understand what local cuisine truly means here.
On Sunday, April 19, 2026, the San Pietro district of Morolo (province of Frosinone, Lazio) hosted the thirteenth edition of the Frascategli Festival, organized by the Associazione Vivere San Pietro. From 12:00 PM, the stands set up along Via Porta del Popolo began serving the hand-made water-and-flour pasta, seasoned with traditional Ciociarian toppings.
Alongside the tastings, the day included live preparation demonstrations, samplings of ciamellone and other local specialties, folk games in the alleys of the district, and red wine from local wineries. Musical accompaniment was provided by Gli Stornellatori, with a repertoire of folk songs from southern Lazio. To facilitate access to the historic center, which was closed to traffic, a shuttle service was provided.
Morolo can be reached by car via the A1 Milan-Naples motorway, taking the Anagni-Fiuggi or Frosinone exit and continuing on the SR 155 towards the Sacco Valley. By train, the Morolo station is on the Rome-Cassino line, just a few kilometers from the historic center.
Parking is available at the Ernesto Biondi Middle School; in recent editions, a free shuttle service has been provided to reach the historic center, as Via Porta del Popolo and the alleys of the San Pietro district are closed to traffic.
Free admission. You only pay for what you consume, with portions of frascategli and glasses of wine at affordable, village-festival prices.
Arrive early (the stands open at 12:00 PM) because the first portions go quickly; wear comfortable shoes for the uphill alleys of the historic center.
