Sagne are a rustic, homemade pasta made simply from flour, water, and salt, rolled out and cut by hand into small diamonds or rectangles. Once a daily staple for peasant families, they are served here with beans according to a recipe passed down through generations, creating a simple and hearty first course that tells the story of the rural culture of the Sacco Valley. In 2024, the sagne e fagioli of Arnara were added to the list of traditional agri-food products of Lazio, a recognition that certifies their cultural value.
