The grand festival dedicated to raw milk cheeses from Valnerina, winding through the alleys of one of Italy's most beautiful villages. In Vallo di Nera, Umbria's only «City of Cheese», Fior di Cacio celebrates the territory's pastoral culture with tastings, workshops, pairings, a giant ricotta, and many outdoor activities, from rafting on the Nera river to transhumance treks. Fior di Cacio is the festival that every June celebrates the raw milk cheeses of Valnerina in the medieval village of Vallo di Nera, in the province of Perugia, one of the «Most Beautiful Villages in Italy». Recognized by ONAF as Umbria's only «City of Cheese», the village transforms its alleys into a path of tastings, workshops, and meetings centered around the region's cheesemaking and pastoral culture.

Tastings, pairings, and workshops

The program combines gastronomic and educational experiences: the «Formaggissima in 3P», a tasting walk with prosciutto, bread, and cooked pecorino; «The Thousand Marriages of Cheese», an educational session by ONAF with pairings of Umbrian wines; workshops on making fresh cheese (primo sale) and mozzarella spinning. On Sunday, the spectacular 80 kg giant ricotta arrives, an iconic moment of the event.

Not just cheese: Valnerina outdoors

Fior di Cacio is also an invitation to experience Valnerina: rafting on the Nera river, excursions and trekking on the transhumance trails, walks with donkeys, theatre performances, and street art animate the village and its surroundings.
